The highly knowledgeable Bruno Clair farms the Estate organically. Bruno also dislikes leaf plucking and speaks of the vines being able to breathe - all the grapes are hand-picked. The berries are mostly de-stemmed to 40% whole clusters, with indigenous yeast fermentation and 20-50% new oak.
