A blend of Ansonica, Vermentino and Trebbiano Toscano from the Tuscan island of Giglio, this is from Bibi's younger vines – the older vines produce the fruit for Testamatta. It's a distinctly maritime white, with aromas of seaweed, olive and herbs combining with flavours of white peach, apricot, lemon peel, sea salt, crisp apple and breezy herbal wafts. Soft in texture, there's a beautiful balance between its sweet-fruited core and bitter, savoury elements. Mostly vinified in steel to retain freshness. 2025-2030
