Domaine Jacques Carillon

The Carillon name has been associated with winemaking around the village of Puligny-Montrachet since the 16th Century - Jehan Carillon was a vintner in the village in 1520. In recent times, Jacques and Francoise Carillon took over the running of Domaine Louis Carillon and together operated the Estate up to and through the 2009 vintage. They then split the domaine's vineyard holdings and from the 2010 vintage and produced the wine separately under their respective names. Domaine Jacques Carillon now produces seven cru wines from 5.25 hectares of vineyards.
Under Jacques, everything in the vineyard is done by hand and to all intents and purposes the domaine is organic, although not certified. Vinification is performed traditionally as passed down from Father Louis. There are no herbicides used andintegrated pest management is practiced only when necessary. A meticulous vine management regime has been adoptedwhich reveals itself in the wine's minerality, texture and complexity. This domaine is intent on reflecting the soils of eachvineyard. The quality of the wines speaks for themselves.
All the wines are aged on lees in barrel for a period of 12 months and then a further 6 months in stainless steel vats. On average only 15 to 20% of new oak is used in the ageing. Their sole grand cru is Bienvenue Batard-Montrachet which producedfrom a tiny vineyard holding of 0.12/hectare (one-quarter acre), four wines are Puligny- Montrachet premier crus and finallythe sixth white is a Puligny- Montrachet Village.
