Aligoté

The second white grape of Burgundy that while lacking the complexity of Chardonnay makes up for it in strength of character and firm acidity. Becoming very popular as it becomes more well known. Very dry, aperitif style. Traditionally the basis of Kir (with the addition of Cassis).
