Brut as in “dry”, S for Savagnin, and zero (°) for no dosage.
Domaine du Pélican's bubbly cuvée, made entirely from Savagnin. No sugar, no added yeasts, just the ripe fruit, which gives the wine its vinous character, and the classic qualities of the Savagnin grape bring vivacity, tension, and vibration. The aromatics are bright and clean. The mouth is long and delicate. Domaine du Pélican wanted to add a bubbly to its range of Jura wines. For this, they have chosen to use Savagnin. Labelled Vin de France because it does not fulfil the criteria for Crémant du Jura, which insists on the inclusion of Chardonnay and Pinot Noir and allows only 30% Savagnin. Disgorgement after 12 months of ageing and 17 months on lees.

The smashing 2020 Brut S Zéro is one of the sexiest Jura sparkling wines I’ve ever tasted. As it contains 100% Savagnin, it cannot qualify as Crémant du Jura and is simply labeled Vin de France. The tasty 2020 unwinds with alluring aromas of sea spray, lemon peel, bruised apple and toast. Totally athletic, the Brut S Zéro is anchored by a firm acidic backbone and concludes with a tight finish. Readers should note that there will be no 2021. Dosage is zero. Very appley nose with strong Savagnin notes. Really fun! Zesty and textbook Savagnin. Bone dry but very far from austere. Even a hint of acacia honey. 17 Jancis Robinson (2024)
